In honor of my son's grades I am posting the recipe to one of his favorite foods...
"Chicken Strips!"



Ingredients:
boneless & skinless chicken breasts
salt & pepper
garlic powder
flour
eggs - beaten (about 1 egg for every 2 chicken breasts)
Italian flavored bread crumbs
canola oil or any other cooking oil

Cut boneless & skinless chicken breasts into strips or pound thin to make cutlets.  Sprinkle chicken with salt, pepper and garlic powder. 

Dredge flour (shake off extra flour), dip in beaten egg, then dredge in Italian flavored bread crumbs. 

Lightly brown in pan with oil (do not cook all the way through) then place on paper towels.

Bake lightly browned chicken on a cookie sheet in a 350° oven until chicken is done and juices run clear.

For Chicken Parmesan...
Follow the above directions making the cutlets instead of strips.  Pour a little of your favorite pasta sauce in a baking dish, place the browned chicken on top, cover in sauce and bake covered in a 350° oven.  Top chicken withe mozzarella cheese and a sprinkle of Parmesan cheese when chicken is almost cooked through. Take out of oven when chicken is thoroughly cooked and cheese is bubbling.
